Lemon & Poppy Seed Muffins with Cream Cheese Icing

~ 100g Little Mill Plain Wholemeal Flour

~ 100g Plain White Flour

~ 150g Sugar

~ 2 tsp Baking Powder

~ 80 ml Vegetable Oil

~ 2 Eggs

~ 80 ml Milk

~ 20 g Poppy Seeds

~ 1 Lemon Zest and juice


  1. Get a large mixing bowl and mix in all the dry ingredients

  2. In a separate container mix all the wet ingredients together (including the lemon zest and juice)

  3. Add the mixture of wet ingredients to the dry ingredients and mix until it forms a smooth batter

  4. Place mixture into muffin cases, this recipe makes enough for 7 muffins

  5. Place in a preheated oven and bake at 200c for 20 minutes

For the Icing

~ 100g Cream cheese

~ 50g Butter

~ 50g Icing sugar

  1. Mix the butter and icing sugar until it forms a nice smooth mixture

  2. Then gently fold in the creamcheese until you get a creamy consistency

  3. Decorate as you wish on cooled muffins
