Next Friday the world will turn green as we celebrate St. Patrick’s day. Here in Ireland it is still March and as we say the month of many weathers. So what better way to warm yourself up after watching your local parade showcase yet another lot of combine harvesters than some lovely freshly made scones and a hot cup of tea.
The Little Mill has a convenient scone mix which makes delicious scones quicker than you can say “Top of the morn’n to ya!” So for all you time poor people out there this is a handy option. To create a seasonal theme with these scones we added 50g of pumpkin seed (green) and 50g of orange peel (gold) into the mix. We then used a shamrock shaped cutter to make these “tricolour” seasonal scones.
~ 50g / 2oz soft butter
~ 175 ml / 6 fl oz milk
~ 50g Pumpkin Seeds
~ 50g Orange peel
~ 2.5” / 60mm scone cutter / we have used a shamrock shaped cutter
~ rolling pin
~ baking tray
~ wooden spoon
~ mixing bowl
~ pastry brush
~ To get started turn your oven on to 180C / 350F / Gas mark4 and lightly flour your baking tray.
Empty the contents of the packet into your mixing bowl and gently rub in the butter with your fingers. Add the milk to the mixture and mix with a wooden spoon until a stiff dough has formed.For our seasonal scones add in 50g pumpkin seeds and 50g orange peel and mix.
Remove from the bowl onto a lightly floured work surface and gently knead into a soft ball. Allow dough to rest for 2 minutes.
Lightly flour your work surface again. Using your rolling pin, roll out the dough until approx. 1’/2cm thick. Use sone cutter to cut out scone and place each one on a floured baking tray.
Press trimmings together and repeat process until all the dough has been used up.
- Brush the top of the scones with milk using a pastry brush. Place into your preheated oven for 12-13 minutes or until golden brown. Remove from the oven and allow to cool. Ovens – check your manufacturer’s guidelines as baking characteristics may vary.
