    Harvest Festival Competition

    The Little Mill Company is looking for the ultimate wholemeal cake. Create recipes with whatever you like; chia or chocolate, carrot or cardamom … we are looking for you to inspire us.

    The only stipulation is that you use The Little Mill wholemeal, you can make a cake using just wholemeal or you can mix wholemeal with white flour, you imagine it and then create it!

    Bring your bake along to the Theatre Royal Vestibule on Saturday, 10th September between 12pm and 3pm to enter this free competition! Judging takes place at 3pm sharp!

  • Celebrate Sourdough September with the Little Mill's Cáca Donn Géar (Wholemeal Sourdough Bread)

    Wholemeal Sourdough bread

    We are delighted to have Eoin Jenkinson, Master Baker at The Little Mill give us his recipe to celebrate Sourdough September.

    This is not your typical sourdough bread, being Irish and loving everything Irish I wanted to create a recipe as authentic as possible utilising low gluten Irish flours and also our pinhead oats. Traditionally brown bread or soda bread was called “cáca donn”, brown cake so I have added the “géar” meaning sour. I have also used milk as dairy was a staple in the Irish diet even before the potato. I have used Velvet Cloud sheeps milk as it is a beautiful Irish artisan product.
