This very simple recipe is made using your left over sourdough bread, by making it into sourdough breadcrumbs and then transforming them into a delicious sweet treat.

It’s coming up to that time of year again, no not premature Christmas decorations. It’s Savour Kilkenny, the foodie event of the year and even better it is the 10th Anniversary of the festival. So it’s going to be a cracker!

As all you bakers and bread lovers will know by now its Sourdough September, a time to celebrate long fermentation and the scrumptious taste of real bread. If you are in Macroom, Co, Cork on the 25th of September make your way down to the Macroom Food Festival. Eoin will take part in the foodie talks taking place in the Town Hall.
These strong flavours work well together, but you can always play around with the combinations. Try spring onions instead of red, pancetta instead of bacon, and any strong cheese in place of the cheddar. Makes 12.
