Seeded Wholemeal muffins

Makes: 12-15

  • 500g Strong Seeded Wholemeal Flour
  • 400g light brown soft sugar
  • ½ tsp baking powder
  • 150g sunflower oil
  • 150g water
  • 4 medium eggs
  • Mixed seeds for topping

Preheat the oven to 200oC, gas mark 6. Line a muffin tin with 12-15 muffin cases.

Place dry ingredients in a large bowl and mix to combine. Mix the wet ingredients in a jug and pour slowly into dry ingredients while mixing, scraping down sides of the bowl. Mix for 2-3 minutes.

Divide between the muffin cases, sprinkle with seeds and bake for about 25-30 minutes until firm. Allow to cool.
