Traditional Irish Soda Bread topped with Grilled Cheese

Makes: One loaf

Ingredients:

  • The Little Mill Irish Soda Bread Mix
  • 430ml/14.5 fl. oz. of milk
  • 200g grated mature cheddar cheese

Method:

Turn your oven on to 165°C/325°F/Gas mark 3 and lightly grease your 2lb/900g loaf tin with butter.

Empty the contents of the packet into your mixing bowl and add the milk. Using a wooden spoon, gently mix together until you form a smooth wet dough.

Spoon the dough into the greased baking tin. Lightly press the dough into the corners using your fingers. To help the bread rise use a wet knife to cut a line lengthways down the centre of the dough approx. 1”/3cm deep.

Place the tin into your preheated oven straight away and bake for 35-40 minutes. When the bread is fully baked an inserted skewer should come out clean. Turn out onto a wire rack and allow to cool before serving.

Cut two thick slices from the loaf and top with grated cheese. Put under the grill until melted and bubbling. Serve plain or with your favourite chutney or sauce.
